I really love the days I’m working at home because it usually means I get to eat a tasty lunch, either at home or from Nhu Lan, the Vietnamese Bakery down the street from my place. Last week, after a run to the grocery store for dinner items (and after a tempting walk right by Nhu Lan), I put together this salad and quite cheerfully ate with the satisfaction of knowing that my lunch was exceptionally tasty, healthy and fresh.
Plum Pistachio and Goat Cheese Salad
Ingredients
1 small plum, cored and sliced
1-2 cups of mixed greens
1 T crushed roasted pistachios
2 T goat cheese, crumbled
1 T fresh mint, chopped
for the dressing:
olive oil
white balsamic vinegar
honey
dijon mustard
salt and pepper
In a jar or a small bowl, prepare the dressing. Toss the plums, mint and mixed greens together. Sprinkle the goat cheese and pistachios on top. Toss with some of the dressing.

That looks delicious! I am happy to be entering salad season. This one is going on my list.
Oh! I need to make this tomorrow. Today’s lunch was totally disappointing.
Gemma, I’m really glad it’s salad season, too, especially because I’m having a good time making up salads and dressings for the week based on whats around. I had a salad today that included some orange pieces, coconut flakes and sesame seeds.
