Eating well on a budget

Recently, Andrew and I decided to really hunker down and start penny pinching. We have some financial goals that we weren’t really getting any closer to.

One of the biggest money drainers for us has been take out. Sometimes we get home from work and school and we’re just so tired and unwilling to make dinner. One way I’m fighting off this culprit: peanut noodles. I’m obsessed. They’re so tasty and easy and cheap! Just cook and drain noodles (soba, whole wheat, regular spaghetti), steam some broccoli (or any other veggies you’ve got on hand) and toss with a peanut sauce.

Here’s how I make mine. The measurements are approximate. You can alter this however you want to your taste.

Peanut Sauce

Combine in a blender, food processor or with a fork in a deep bowl (to prevent splashing and spilling):
2 - 3 Tbsp unsalted, unsweetened natural peanut butter
1 Tbsp rice vinegar
1 tsp fresh ginger, minced
1 clove garlic, minced
1/2 - 1 Tbsp brown sugar
1 Tbsp soy sauce

Add warm water, 1 Tbsp at a time to adjust the consistency.
Taste and adjust the ingredients accordingly.

We usually end up eating these noodles topped with green onion and alongside a salad. I’ve also made sesame noodles by using tahini in place of the peanut butter.
